Wilted Lettuce





WILTED LETTUCE




Approximately 6 cups fresh lettuce  
1 bunch green onions sliced
3 slices bacon
1/4 cup vinegar
1/4  cup water
1 tsp salt
1/2 tsp pepper
1 egg beaten
1 Tablespoon sugar
2 boiled eggs chopped

Clean lettuce and chop green onions and toss together.

 Cook bacon in skillet until crisp and drain on paper towel.

 Retain bacon drippings in skillet and add vinegar, water, salt, pepper and sugar. Heat to boiling stirring constantly.

 Remove pot from heat and take a small amount of hot liquid in spoon and drizzle into beaten egg to warm egg while continuing to beat egg. Continue drizzling  warm dressing into egg until egg mixture is warm to touch and then add back to pot.

Now put pot back on heat and simmer for several minutes until dressing thickens stirring constantly.

Pour hot dressing over lettuce. Crumble crisp bacon on top and chopped egg.
Serve immediately. Yield 6 servings

  1. Wow I have never had it with boiled eggs in it!! Sounds good.

    I can never hear about wilted lettuce without laughing out loud. My Morgan's other grandmother told us the story of when she and her husband first married and her new husband told her that his favorite food was wilted lettuce that his mother made for him. Betty decided that she was going to please her new husband and went to the store and bought a head of iceberg lettuce and came home boiled some water and poured over it and served it to him!!!!! Hahahahaha!! She said he choked it down and then he told her to please ask his mom how how to make real wilted lettuce!!!
